DAN WALKERHOSPITALITY ADVISORY

How it works

A clear plan.
Progress you can see.

Understand the operation, agree the priorities and put practical improvements into place. You know the scope, fee and your team’s responsibilities before work begins.

From first conversation to follow-up

The right starting point.
A practical way forward.

The process fits the work: a focused review, a service improvement project, team development or a systems upgrade.

  1. 01

    Understand

We discuss your venue or group, what is working well and what needs attention. The first 20-minute conversation is free.

  2. 02

    Review

Choose a fixed-fee review or agree a tailored scope. We look at the relevant figures, workflows and standards, with on-site observation where included.

  3. 03

    Prioritise

You receive findings, practical recommendations and clear next steps. We identify immediate fixes and the work that needs a longer-term plan.

  4. 04

    Deliver

Your team can act on the plan, or engage me to deliver agreed changes. Implementation has a separate scope, fee, timeline and responsibilities.

  5. 05

    Follow up

Reviews include a debrief or follow-up call. Implementation includes the agreed checks and handover; further reviews and advisory support can be scoped if useful.

Choosing the review

Start with what
you need to understand.

A Business Health Check is a focused look at trading performance and management priorities. A Systems & Workflow Review looks at POS, stock, reservations, rostering and accounting. A Full Venue Business Review adds a broader operational assessment, including an on-site service observation.

Each review has a defined scope and delivers advice you can use independently. For a group or a more specific brief, we agree a tailored review.

A systems implementation example

Configuration.
Testing. Handover.

When the agreed project includes systems, I lead the configuration, coordination and testing. Managers bring the operational knowledge, review decisions and prepare their teams.

BEFORE WE START

Review & prepare

We review your operation, establish a baseline and agree the scope, investment and measures of success.

Your part: nominate a decision-maker and provide approved menus, prices, usable recipes and account access.

WEEK 01

Configure & connect

I configure the agreed products, workflows and supported connections across your systems, documenting mappings and decisions.

Your part: review the service setup and resolve operational questions promptly.

WEEK 02

Test & train

We check reservation handovers, orders, modifiers, stock usage, wage reporting and accounting outputs. Managers practise the workflows in live online training.

Your part: complete manager checks and lead team training before the launch review.

AFTER LAUNCH

Support & hand over

We review actual trading, address agreed issues and hand over the documentation and ongoing responsibilities.

Your part: maintain the controls and use the reporting to guide daily decisions.

We target ten business days for suitable, prepared venues. The clock starts once scope, access, data, vendor connections and hardware are ready. Launch depends on passing the agreed checks. Vendor delays or additional requirements may extend the plan; support hours and duration are agreed in the proposal.

Your project, in view

No chasing
for an update.

A shared project overview brings together completed work, upcoming actions, decisions and responsibilities. Updates make it clear where we stand and what needs your input. The example below shows a systems rollout; the overview is adapted to the agreed project, whether that involves service standards, training or systems.

Today’s update

Ordering setup ready for review

  • Food and drink option sets configured.
  • Product-to-recipe mapping prepared.
  • Draft manager training guide available.

Next: run sample transactions and compare stock usage and accounting outputs.

Your input needed

Two decisions to keep moving

  • Venue manager: approve takeaway modifiers before the next testing session.
  • Owner: confirm the managers attending online training before sessions are scheduled.

Dependency: vendor confirmation of the sales feed is still required for stock-usage testing.

Training & manager support

Confident managers.
Capable teams.

Practical training connects the agreed standards with what happens during service: welcoming guests, managing bookings, communicating between the floor and kitchen, and handling the situations teams face every day.

For onboarding or service improvement projects, we agree the guides, training plans and competency checks your managers need. I help them build the confidence to coach their teams and maintain standards.

Systems training uses the venue’s configured workflows. Online train-the-trainer sessions help managers practise the tasks they will teach, with on-site checks where needed.

Training, new resources and follow-up support are defined in the implementation proposal. They are separate from the fixed-fee review packages.

Measures that fit the work

Agree the baseline.
Measure what changes.

We choose measures relevant to the project: guest feedback and service consistency, onboarding completion and team confidence, wage and product costs, or hours spent on repeat administration.

Clear ownership

Owners and managers know which decisions, standards and routines they are responsible for.

Practical handover

Agreed documents, training and checks help the team carry the work forward after implementation.

Visible progress

We review the agreed outcomes and distinguish time saved from cash savings. Further support is available if useful.
